I would avoid the large hotels. Most of them are like hotels everywhere, and you'll probably end up with large tourist groups, bus trips, etc. Much better to find out where you want to stay and search on booking.com and airbnb.com. There are also many "rorbuer" (small fishermen's huts). Some are super cozy, others are not. Some are just modern cabins sort-of designed to look traditional. Read reviews and look at the photos.
