I haven't dug enough into the items in my tool list to know whether they can do stored variables or not, but https://openreplay.com/index.html might worth a look. https://posthog.com/ is another tool, but focuses on product analytics, so I don't know how far it goes into its session replay feature.

Regarding stored variables, it may be hard for a product to do this in a production environment because of the limitations of the language. I believe the options that were posted below (Openreplay, Posthog, etc..) also don't have that functionality.
