I don't have any direct experience and am only suggesting it because you mentioned RoR...But Grails (https://grails.org/) is basically the JVM version of RoR (Groovy on Rails -> Grails). Source: over 1 year ago

That’s definitely possible! There’s a lot of resources to help learn bubble, but I also recently created a bubble course at https://nocode.mba (with a 7 day free trial) The first tutorial in it actually covers that exactly (create a to do list by filling out a form).
