I use Restart On Crash because of this issue. Not necessarily with Plex, but with the other apps on my system. It is nice because it also keeps a log, so it helps you to figure out if there is a pattern to the crashes. Source: over 1 year ago
You could also look into restarting eventghost after a crash using something like restart on crash, or look at running EG as a service. Source: about 2 years ago
What I ended up doing was scheduling my server to restart once a week in the middle of the night, and I also started using this nifty program called Restart on Crash to automatically kill the plex process and restart it whenever the server would hang up or crash. Source: over 2 years ago
