You should be able to find cover art above 1000x1000 for Goo by using the program Album Art Downloader. Album Art Exchange used to be a great outlet for finding high quality cover art, but it was taken down. Source: about 1 year ago
I don't know of a specific plugin, but I know myself and plenty of others use this. Https://sourceforge.net/projects/album-art/ It integrates very nicely with the foo_run plugin, allowing you to call from the right click -> run services context menu. Source: about 1 year ago

The metadata/tagging can be done while ripping with all mentioned also. Or something like Mp3tag can need used to edit them later.
