We've used Padlet in the past but switched to Menti a year ago or so. There are many other tools, and most have an export feature, which allows you to download the data in a format readable by Excel. In Excel, we code each comment according to the categories covered by our in-house course survey: content, facilitation, duration, pacing, venue, materials, learning, relevance, satisfaction, and likelihood to recommend. Don't do bootcamp. Start with something like https://freecodecamp.org and take a few lessons. Try to build something from that and see how motivated you are. If you see some progress and this thing still excites you, then may be find an engineer (a friend/co worker etc) who can guide you a bit as you continue to build something.
