  If you do find a way to hide app menus you might consider using Paletro or a similar extension for an automation tool, I know Alfred has a workflow for it, I'm guessing Raycast, Launchbar and maybe even Keyboard Maestro do to.   How is performance these days? I used to use it or an alternative workflow and there was always a few second lag when I activated the workflow in each respective app for the first time after rebooting.   In the past I used to use an online app called DIARIOAPP (before they went to more of a subscription model); I also used Microsoft Word before that. More recently I've been trying out Microsoft One Note Journaling with One Note. I have an iPad, an Android cell phone, and a Windows computer--so I prefer a tool that is muli-platform.
