There is the commercial Pepakura Designer[1] for Windows since the 90's (I think). The mother/father of all desktop papercraft unfolding apps. Then there is a new free one, Papercraft[2], written in Rust, that will probably build on all major paltforms. Do not confuse with the STL-based papercraft (lower case p) someone else mentioned[3].
