There are so many options. The public transport connections are very good and there are trails going almost in all directions. I've been almost everywhere around Prague that can be done in one day with public transport. All you need to do is check mapy.cz pick a route that has many viewpoints or castles or whatever and then try to find on idos. Some suggestion that are very easy for beginners...
