Do you have a budget? If so, there's this tool I've worked with called Sonix that generates transcripts of what you feed into it. It's not super accurate, but it's good enough. Acuity or Calendly would also let you do this. People normally use these sites to allow their clients to schedule meetings or classes, but you could certainly set up a calendar for your boss where you are the only "client" — you're the only person who schedules meetings.
