I too have always been interested in such devices, and am also now in the Linux world. (My default distro is Manjaro with xfce). The fix is open-source firmware, like Coreboot or LinuxBoot. Incumbent PC-compatible vendors aren't too interested, but there's more than enough room at the table for offshore and onshore vendors to use open firmware as a feature.
