I had ideas to build an app, and made few 2 years ago or so. Indeed these technologies are great to start with. I would suggest going with Kodular.io or thunkable.com instead of appinventor. Do you have a budget? If so, there's this tool I've worked with called Sonix that generates transcripts of what you feed into it. It's not super accurate, but it's good enough.
